It’s Thursday night, and already my head is full of what I want to create to feed everyone tomorrow! Inspired by the bushy, blooming basil in my garden, I gave a fresh, new twist to my Thai-hini. With the addition of purple and cinnamon basil and the juice of some fresh limes..WOW! Holy new taste extravaganza! My dinner largely consisted of cucumber spears and red pepper slices dipped in this Earthy, spicy, bright concoction.
What that means for you, dear Cafe patrons, is this:
Yemaya-Thai-Mania! Crisp leaves of Chinese Cabbage, filled with Yemaya’s Delight, cucumbers, red peppers, avocado, pineapple AND mango (I couldn’t decide between the two, so I just decided to add both!) and drizzled or slathered..you choose…with Basil-Lime Thai-hini. Served with a side salad and your choice of fresh Gemelli bread or Gluten free crackers. $12.95
Market Medley Quiche Back by popular demand! Ok, 3 people asked today if the quiche would be a staple, and one person who missed lunch hoped that I would make it again. I think that qualifies as popular demand, don’t you?!
Imagine a medley of local veggies: zucchini, cauliflower, broccoli, parsley, and some not yet local..carrots, sundried tomatoes and celery…marinated in balsamic vinegar, olive oil and a few other secrets…The zucchini in thin strips as the first layer..the rest of the veggies minced and pressed, then topped with herbed ‘mashed potatoes’ (cauliflower and cashews) then warmed in the dehydrator till everything is delicious and warm and the potatoes have just enough crisp…THAT is Raw Vegan Quiche!
