A Spring Break Blizzard!
Happy Valley has received it’s annual Spring Break Blizzard! It’s *grudgingly* beautiful out there! This week, we will have slightly limited hours. We will open at 10:30 instead of 9:30 (Tuesday through Friday) and there will be NO DINNER this Thursday night. Take advantage of the emptiness of town, come down for a cup of tea, Fair Trade Organic Peace coffee or a smoothie, relax and use our new WIFI! Looking forward to the new energy that this will bring to our Enchanted Lotus circle!

Happy Sunny Day in Happy Valley!
We are so excited about the new March Momentum here at The Enchanted Kitchen. Amanda and I are working hard to create exciting additions to our menu! Recently we’ve added a RAW Almond Hummus which is just incredible amazing!!!! I have always been a Hummus lover, but have not eaten it in years, as chick peas are super hard for me to digest and using them cooked isn’t raw! I have experimented with sprouted chick peas, but the texture just isn’t the same. Who knew that germinated almonds blended with my own ‘infamous’ Hummus recipe would be so DELICIOUS?!! Please come in and try it. I promise you won’t be disappointed.
The treat for the week is this: Come in and order our Yamoodles, with the newly decadent Fig Miso sauce and topped with Herbed Walnut pate and take as our gift to you, a 2 ounce container of Herbed Walnut pate!

Hello there. It’s the first snow day (for schools) of the season, and The Enchanted Kitchen will be closed today. As much as I look forward to feeding everyone, today I choose to remain safe and stay away from driving on ice!

Monday’s Musings
It’s snowing lightly here and the streets are peacefully calm after the mass exodus of the students on Friday. I’m here at the cafe, listening to Soulive and preparing spreads for pickup. Construction of a wall between lotus center yoga and The Enchanted Kitchen starts today! It’s going to bring a whole new energy to our space! It will allow privacy and soundproofing for both sides and also allow me to offer a breakfast menu! I will be formulating that over the break. Think dehydrator granola, toast and jam, coffee, tea, smoothies, breakfast melts…YUM!
I have decided to extend the deadline for Holiday orders until Wednesday morning, for pickup here at the cafe on Thursday. Sunflower Seed Pate, Winter Walnut, Roasted Red Pepper Hummus or Yemaya’s Delight. I am also making a Holiday Festive SuperFudge with Pecans and Cranberries!

Thoughts for Thursday
I am so excited this morning! I had an interview with Vickie McIntyre from State College Magazine, to be published in the March issue! My day here began by talking about all the new ideas swirling in my mind about food, smoothies and how we all choose to feed ourselves.
My inspiration for a new dish today came yesterday at the grocery store. Grapefruit Goddess Greens! Come in today for this calcium, iron and vitamin C filled deliciousness! A bed of baby spinach, Ruby Red Grapefruit sections, dried cranberries, avocado and cucumber, topped with a scoop of Ginger Walnut pate. For comfort, add a side of Mashed Roots with warm Miso Gravy.
I can’t say enough how AMAZINGLY decadent and delicious the Pecan Pie smoothie is! A scrumptious treat packed with healing fruits, healthy fats and maca root for an extra skip in your step!
Don’t forget that we are open for dinner tonight from 5-8 pm. Stop in to our cozy den!
