Baby, it’s COLD outside!

Whew!  Winter has come a week early here in Central PA!  It is FRIGID outside!  Luckily for you, The Enchanted Kitchen is a cozy den of Earthy Goodness!  Stop in for a spell and warm your Body and Soul. 

Today’s featured locally blended tea is Itzamna’s Choco-Mate Herbal Chai Elixir.  It is a boldy spicy and exhilarating herbal tisane, named for the Mayan god of science and medicine.  This invigorating tonic is based upon a traditional Meso-American recipe. 

We also proudly serve Fair Trade Organic Peace coffee.  Today’s brew is Birchwood Breakfast.

For lunch, come in for a Winter Walnut Melt, gooey, warm and delicious with Irish Cheddar and spicy mustard greens to keep your circulation going.  Or try the Yamoodles, today in a Figgy Balsamic Miso, tossed with cranberries and your choice of spinach or mustard greens. 

My latest decadent, yet oh-so-good-for-you! smoothie is Pecan Pie…a blend of pecans, ginger, almond milk, coconut, cinnamon, maple and a touch of maca root for that energizing zing to keep your day buzzzing!

Re-Opening!

Finally, finally, finally!  After nearly a week of being unable to open due to plumbing issues, I am so GRATEFUL to announce that I will joyfully open my doors tomorrow!  Come for some delicious Fair Trade Organic Peace coffee, or try our delicious new Pecan Pie smoothie!  So creamy and decadent, you won’t believe it’s so good for you.  Spiked with just a touch of Maca root to give some Zing to your morning!

Dinner and Smoothie Hour

At long last, The Enchanted Kitchen will begin dinner hours!  This Thursday, October 7th, we will be open for dinner from 5 to 8 pm!   A sneak peek at the menu:  Pumpkin Raisin Pecan bread (raw, vegan and warm from the dehydrator), Carrot Pumpkin seed patties with Sunflower Caraway Bread, (served with an amazing dipping sauce) and for dessert:  Super Zingy Chocolate Ganache Superfood Fudge!   We are also experimenting with a Pear Apple Oat Walnut Pie.

Sunday the 10th, Amanda will be at the cafe from 12:30 to 1:30, serving up her delicious Smoothie creations and fresh live juices to complement the morning Detox Flow yoga class.  Also available will be spreads and pates to go.

Bread:Part 2

Oh what a fun day we had today!  The bread was simply AMAZING!  Before I show you the finished product, I thought you might like to see the process (beyond Amanda’s discontent at the size of the zuke!)

To make the dough, we ground almonds and flax seeds

Pureed zucchini

Next, we puree the zucchini, then add it to the dry ingredients, along with olive oil, tamari, agave nectar and SECRET spices.

Finally, the batter gets spread out on dehydrator trays with Teflex sheets

Curried Zucchini Bread

It’s a chilly Tuesday morning here and I am sooo excited to get to the Cafe today!  We have 5 trays of Curried Zucchini Almond bread wafting delicious aromas all around from dehydrating all night long!  We started it yesterday at Noon at 145 degrees (to prevent bacteria growth), then after 3 hours, I turned it down to 115.  I cannot wait to taste this yumminess!  Here is a picture of Amanda with the RIDICULOUSLY huge zucchini we started with.

Hello!  Welcome to the newest incarnation of the Enchanted Kitchen.  School has started and I have hired 2 full-time employees!  This is exciting on so many levels.  I am not used to having this constant help and it is amazing.   We are all working together so seamlessly…an Enchanted Family!

A Breath of Fresh Air

It’s been a while since I’ve updated here.  It’s been a hectic few weeks.  Learning how to juggle the new cafe, the home, the child, the husband AND the new website is a process!! 

Today feels so fresh..perhaps it’s the gentle rain that is nourishing my garden while I am here.   My beautiful, abundant garden gives me so much inspiration to feed everyone, so today I gave Yemaya a MAKEOVER!!   She is lovingly bedecked in 4 varietes of basil from my garden, as well as the juice of 2 fresh and zingy limes!  Come and experience this new taste sensation.

I also thought it was about time I do some desserts!  So today I bring you Fig Raisin Pecan Truffles rolled in Coconut.  YUMMM.  Come in and experience the ZING of lovingly prepared food.  Nourish your Soul!

Summertime Zoodle Salad   A pile of Zoodles, tossed with Dill All-Freedo sauce, red bell peppers, orange tomatoes and garden fresh parsley.  Served with Gluten-free crackers and your choice of Basil Sunflower seed pate or Yemaya’s Delight

Sunnie Wrap Platter   Basil Sunflower Seed pate, cucumbers, cranberries, carrots and lovely leaf lettuce, rolled in an Organic Sprouted Grain tortilla, served with a side salad with your choice of Mint Mango or Mother Earth’s Herbal Vinaigrette

Yemango Salad  A bed of organic  greens, cucumbers, mango and avocado, topped with Yemaya’s Delight, served with Mango Mint Vinaigrette and a touch of spicy Thai-hini

Joyfully Almond:  A lovely blend of germinated almonds, banana, cacao, coconut and almond milks, cinnamon and a dash of maple syrup…lip lickin good!

Carrot Cake:  Making the most of the pulp from our fresh juices, then add germinated walnuts, pineapple, cinnamon and almond milk.  You won’t believe it’s vegan!!!
